Holiday Soup Mix can be used to make a hearty helping big enough to feed a holiday crowd but is also a delicious meal that can be served year round! Green split peas, yellow split peas, red kidney beans, lima beans, blackeye beans, lentils, great northern beans, pinto beans, black turtle beans and pearled barley come together to make this healthy soup so full of color it will make a festive addition to any table.
Traditional how to:
1 cup Holiday Soup Blend
1 quart water
1 ham hock (optional - try using smoked paprika for vegetarian soup)
½ c. diced onions
1-12 oz. can diced tomatoes
½ Tbsp. chili powder
1 Tbsp. lemon juice
¼ tsp. black pepper
½ tsp. salt – more or less to taste
Wash beans, place into a plastic container and cover with 2 cups of water to let soak in the refrigerator overnight. Drain beans and place in a heavy pot or slow cooker. Add 1 quart water and all the other ingredients. Simmer for 3-5 hours. Remove the ham hock, take the meat off the bone and add back to soup.
Makes 5 cups of prepared soup. Entire package makes approximately 3 1/2 quarts of prepared soup.
