Dried carrots are very low in Saturated Fat and Cholesterol. They are a good source of Thiamin, Vitamin B6 and Manganese, and a very good source of Dietary Fiber, Vitamin A, Vitamin K and Potassium.
Dried carrots retain their color, flavor, and most of the nutrients. Dried carrots are terrific in soups, stews and sauces. They take up very little space, weigh very little and are easy to store. Approximately 1/4 C equals 1 C fresh diced carrots.
