Quinoa (KEEN-wah) is the most widely recognizable of the ancient grains.  It has been a staple in the diet of people in the Andes for thousands of years; the Incas called it “the mother of all grains.” Long before Europeans colonized South America, quinoa was being cultivated and eaten throughout much of the continent.

Quinoa is loaded with protein other valuable nutrients and most commonly used as a substitute for rice in many recipes.

Cooking Instructions:

1 cup Quinoa in 2 Cups of boiling water or Chicken Broth add: 1T. of oil or butter,
1/2 t. salt, simmer covered on low for 18-20 minutes, remove from heat,
let set for five minutes.
