Cinnamon is a sweet flavoured spice, commonly used as a major constituent of ‘Mixed spice’.

The whole quills or cinnamon sticks can be added to stews, used to flavour curries, mulled wine, punches, added to stewing fruit for flavour, rice dishes (including rice pudding) or used to stir and flavour hot chocolate or coffee.

Just smelling the wonderful odor of this sweet spice boosts brain activity!  And consuming cinnamon improve the body's ability to utilize blood sugar.

Certain spices that are often used along with cinnamon in recipes can provide a very similar flavor to cinnamon and can be used to replace it. Allspice berries taste like cinnamon combined with nutmeg and cloves, so this spice could easily replace cinnamon. Nutmeg and cloves are spices with similar earthy and sweet flavors like that of cinnamon. Another option is mace, which is the covering of nutmeg that provides a more tart and less sweet flavor than nutmeg itself.
