Amazing Parsley

Parsley's volatile oils have been shown to inhibit tumor formation in animal studies.  It's a food that can help neutralize particular types of carcinogens (like cigarette smoke).  In addition to its volatile oils and flavonoids, parsley is an excellent source of vitamin C and a good source of vitamin A.

A rich source of antioxidants, promotes a healthy heart and protects against rheumatoid arthritis.

Use parsley, chives, tarragon, lemon zest and a bit of olive oil for a rub on chicken, beef or lamb.
